Compound chocolate or 'compound coating' is a product made from a combination of cocoa, vegetable fat and sweeteners. It is used as a lower-cost alternative to true chocolate, as it uses vegetable fats over cocoa butter.
Compound coatings however, do not need to be tempered. Instead they are simply warmed between 3 - 5°C.
White compound chocolate is perfect when creating on-trend Chocolate Sails or using in moulds. It must be coloured with Oil Based food colours.
Ingredients: Sugar, Vegetable Fat, Whey Powder, Emulsifiers (Soya Lecithin, 492).
Made on the same equipment that also produces products containing nuts and milk solids.
