LorAnn’s liquid Soy Lecithin is a true powerhouse when it comes to extending shelf life of food products. Adding Soy Lecithin to your baked goods can help achieve that ‘as fresh as the day they were made’ taste. An all-natural, viscous extract derived from soybeans, Soy Lecithin has super-charged emulsification abilities that produce perfectly blended dressing and sauces, but the magic Lecithin adds to baked goods is what is really exciting! Lecithin’s ability to slow the oxidation of fat will keep your baked goods moist and butter and fresher longer.

Lecithin is also ideal for thinning chocolate. Recommended usage is .25-.50% Lecithin per total batch.

Application: Recommended usage is 2-3 teaspoons for every 3 cups of flour. There is no need to adjust any other ingredients, cooking time or temperature. As only a small amount is added, Lecithin will not alter the flavour of your foods.

When adding to chocolate, take care to not add too much as Lecithin can have the reverse effect and cause chocolate to thicken.
