Nestle Milk Couverture Chocolate Alpine is a very high-quality chocolate that contains extra cocoa butter. The higher percentage of cocoa butter, combined with proper tempering, gives the chocolate more sheen, firmer ‘snap’ when broken and a creamy mellow flavour. The Milk Couverture Chocolate can be used to make a hard setting ganache which will give you a firm surface under your fondant.

Application: Use Couverture Chocolate to make quality chocolates and firm setting ganache. Coat your cake with ganache and scrape back excess.  The firm setting nature of Couverture Chocolate ganache allows it to set firm giving you a smooth surface for your fondant.
