This is the same method taught in Cliffs decorating workshops around the world.
Unlike standard ganache discs, they are sized (slightly larger than the cake) to eliminate cake trimming & wastage when covering in buttercream.
No trimming, simply place a disc on top & bottom, fill sides & scrape away excess for a smooth, straight finish.
It even gives the perfect buttercream thickness!
